Beef Wellington – deconstructed – FK PraelBy Samuel DietzmannTools: - Knife - I strongly recommend a well sharpened straight edge knife - Instead read thermometer - Baking pan or broiler - Saute pan - tongs A classic beef wellington uses all of the below ingredients, and is wrapped in a puff pastry and baked to done-ness. We did a deconstructed Wellington, above, for Valentine’s day, and served 5 people in about 40 minutes.
Hollandaise – FK PraelBy Samuel DietzmannFamily Recipe. Tools: Whisk Either a double boiler or a pan + pot that can achieve the same result This recipe takes practice. Two common issues: - The sauce “breaks” and you get little bits of cooked egg in a runny sauce. This means you didn’t properly whisk the sauce, and possibly added the butter too soon. - The sauce is runny. This means the butter didn’t properly emulsify into the egg/lemon juice mix, and the eggs didn’t properly custardize. The sauce is fine, but will be thin. I’ve never had anyone get this right on the first try. But a little practice, and you’ll be doing it like a pro.

I have also used fusili, and several other types of pasta, depending on my mood and what is in the pantry. Special Ingredient Chili – Kapitan der Sterne ColeBy Samuel DietzmannWay to get more vegies into Scouts. I developed this as an easy recipe for Scouts that got some extra vegetables into them. However, it is now the go-to chili for around our house. The Zucchini adds both bulk, vitamins, fiber, and a surprisingly good flavor. If done out camping use 6-8 coals underneath in the center of the dutch oven and 1` ring around the top. Be prepared to replace them every hour, so start a second set half an hour after you replace a set. Alternatively it works well on a propane stove, but make sure you have plenty of fuel. Or simply make the day before, and just warm up on site. Chili is always better the second day anyway.
Chicken Dutchilladas – Kapitan der Sterne ColeBy Samuel DietzmannI first discovered it while a Scoutmaster. In the monthly newsletter they had a contest for best Dutch oven recipes, and this one won. I have modified it over the years, but it is basically the same. Although this works in a standard oven, I have used it a lot for outdoor cooking, both for Scouts and at SCA events. When cooking outdoors I use the Dimwhitty method. Essentially you need 6-8 coals underneath in the center, and 1 ring of coals at the outside edge of the top of you dutch oven. Cook for 1 hour. As it is so easy to do I find it a great Friday night during set up dinner. You can get fully cooked chickens at Costco or most grocery stores. Just let them cool and pull the meat off. Store it in a bag in your refrigerator or ice chest until ready to use. Likewise onions can be cut up ahead of time.
