Way to get more vegies into Scouts.

I developed this as an easy recipe for Scouts that got some extra vegetables into them.
However, it is now the go-to chili for around our house. The Zucchini adds both bulk, vitamins,
fiber, and a surprisingly good flavor. If done out camping use 6-8 coals underneath in the center
of the dutch oven and 1` ring around the top. Be prepared to replace them every hour, so start
a second set half an hour after you replace a set. Alternatively it works well on a propane stove,
but make sure you have plenty of fuel. Or simply make the day before, and just warm up on site.
Chili is always better the second day anyway.

Yields1 Serving
 1 Package of your Favorite Chili Mix
 1 lb Ground Beef454 g
 1 lb Sausage, hot links if you like it hot, otherwise smoked sausage, cut into bite size chunks.454 g
 2 Medium White or Yellow Onions, finely diced
 16 oz Tomato Sauce473 mL
 1 cup Water or 1 Bottle good Beer250 mL
 2 tbsp Diced Galic30 mL
 2 cups Special Ingredient: Shredded Zucchini, pressed between paper towels to pull off most of the moisture500 mL
 32 oz Canned Chili Beans910 g

Brown ground beef in Dutch oven. Use paper towels to remove most of the grease. If sausage is not already fully cooked then cook it at the same time.

Add everything else to the pot, mix, and cook on low of 2-3 hours.

Taste test every hour, and adjust spices to your liking.

Not hot enough? Add crushed red pepper. Try Cumin or Curry powder. Get a bitter taste? Add a little brown sugar.

Note on using beer. I find it gives a better taste than water, but you can go either way. If using beer use a good one. General rule is if you wouldn’t drink it don’t cook with it.

Serve with shredded cheese, sour cream, and hot sauce. Someone always wants it hotter.

Corn Chips, corn bread, or rice in the bottom of the bowl are also a nice accompaniment.
