1 Large or 3 Small English or Persian Cucumbers
2 tbsp Salt
1 tbsp Sugar
¼ cup Rice Vinegar

Thinly slice the cucumbers and place in a mixing bowl.

Sprinkle salt on the cucumbers and toss. Let sit for 10 minutes, then drain the water

In small bowl, dissolve the sugar in the rice vinegar. Pour over the cucumbers.

Cover and let sit in a refrigerator for at least 1 hour. It’s now ready to eat.
