Two common issues:<br \/>\n&#8211; The sauce \u201cbreaks\u201d and you get little bits of cooked egg in a runny sauce. This means you didn\u2019t properly whisk the sauce, and possibly added the butter too soon.<br \/>\n&#8211; The sauce is runny. This means the butter didn\u2019t properly emulsify into the egg\/lemon juice mix, and the eggs didn\u2019t properly custardize. The sauce is fine, but will be thin.<\/p>\n<p>I\u2019ve never had anyone get this right on the first try. Making the sauce<\/p>\n<\/div>\n<\/div>\n<div class=\"cooked-single-direction cooked-direction\" data-step=\"Step 4\">\n<div class=\"cooked-dir-content\">\n<p>Place the double boiler over boiling water. Immediately start whisking the egg yolks + lemon juice. Continue whisking until it froths lightly and has a ribbon-like consistency and starts to thicken.<\/p>\n<\/div>\n<\/div>\n<div class=\"cooked-single-direction cooked-direction\" data-step=\"Step 5\">\n<div class=\"cooked-dir-content\">\n<p>Slowly pour the melted butter into the mixture, whisking continuously.
